Expo 54 + React Native 81 bring so many performance improvements 🚀

The new Loops app I'm writing from scratch is much more performant and responsive as a result.

While I can take some parts from the existing Loops app, I'm focused on performance and a better dev experience (bye tamagui, hello twrnc/tailwind)
